4 medium onions
1. Peel and cut the onions in half. Lay them cut side down and slice lengthways. Place them in a large frying pan, and coat them in olive oil (roughly one teaspoon per onion).
2. After ten minutes, sprinkle with some salt, and sugar (optional - it just helps to speed up the caramelisation process). Leave over a low heat, stirring occasionally, until caramelised; adding more sugar if necessary. It will take at least half an hour, but I tend to leave mine for up to an hour.
