Basic Tomato Sauce

Basic Tomato Sauce

Yield: enough for two pizzas


olive oil
2 cloves of garlic, chopped
1 x 400g tin whole plum tomatoes
bunch of basil leaves, torn
salt and pepper


Method:

1. Pour a generous glug of olive oil into a medium-sized frying pan.  Add the garlic, tossing it in the oil until it has browned slightly, and then add the basil and the tomatoes.  Use your wooden spoon or spatula to break the tomatoes down as much as possible.  Season with salt and pepper, and allow to come to the boil.

2. Once your sauce has come to the boil, remove from the heat and strain through a sieve into a bowl, using your spoon to push through as much liquid from the mixture as possible.  Discard the tomato, basil and garlic that is left in the sieve.

3. Pour the sauce back into your pan and allow to simmer for a good few minutes until it thickens.  The flavours will concentrate during this time, too, making it even more delicious!  Once you've judged it to be the perfect consistency for spreading on your pizza base, remove from the heat.  Roughly ten-fifteen minutes.
